TOJIRO’s product range is one of the widest in the industry. We really like the variety of products we get from them. The Tojiro color series is a sleek line with a light antibacterial plastic handle and thin blade. These guys are sharp but durable, so you don’t have to worry as much about chipping them. These are awesome knives for those in professional settings who need a sharp knife that’s easy to resharpen.
The steel they use is called Molybdenum Vanadium, usually used for scalpels, and have a resistance to corrosion that makes them handy for Professionals!
About the Shape – This is also a multi-purpose knife, but with a slight vegetable bias. Santoku means ‘Three Virtues’ or ‘To solve Three Problems’. The virtues or problems are slicing, dicing and mincing. Santoku is usually found in 160mm – 190mm lengths. These are more and more popular in Western kitchens due to the unique shape and smaller easy to handle size.
