The Naniwa Professional Chosera Stone 600 Grit is a slightly finer version of the 400 grit stone. If you are sharpening a knife that gets a lot of work in a professional kitchen this is a great stone to finish a western knife on.
When to use this stone:
- Great for Scandi-ground outdoor knives.
- Nice bitey finish for outdoor knives.
- Our Vancouver store manager says “The colour of this stone makes my brain tell me to eat it. It looks like it’ll taste like sour candy. I have no explanation for this and it haunts me” he is a weird dude.
Always flatten your stone with a truing stone after sharpening.
