About Haruyuki Nishiki – When I use the term “traditional steel,” this is exactly the stuff I’m talking about. Shirogami, known as White Carbon Steel in English, will rust if you blink too slowly but cuts like something from another dimension. Seriously, it will change how you think about sharpness. The folks behind this knife realized rustiness was a pain, so they clad the blade in two outer layers of stainless steel. Finished with an elegant cherry wood handle, this blade is as classy as it is sharp.

Skilled artisans then complete the remaining steps by hand, from polishing and sharpening the blade to affixing its handle. About the Shape – Inspired by the profile of a traditional European chef knife, Gyutos are a multi-purpose knife with a slight meat cutting bias. ‘Gyuto’ translates to ‘cow sword.’ If you want one knife to do it all, This is it. Starting at 180mm, Gyutos can reach the ridiculously long (and awesome) 370mm. For the at-home or professional cook, we recommend a Gyuto, which measures between 210mm and 270mm long.
